Linguine

It always seemed like making pasta would be a very difficult and time consuming activity. However, making it by hand isn't difficult and makes that special touch to any meal. However, I have found having a pasta roller makes the process much, much easier. 

First, combine all ingredients and knead into a dough. You may need to add water, but don't add too much.

Place the dough in plastic and allow it to rest for 1 hour.

I cut the dough up into quarters to make the rolling process easier.


I flatten each quarter into a fat disk in preparation for rolling with the pasta machine.


Use the pasta machine to roll into thin sheets.

Once the sheet is sufficiently thin, use the cutters on the back of the machine to cut it into noodle slices.


Once the noodles are cut, they need to be placed on a rack to dry for several hours.

Once the noodles are dried, bring water to boil and salt to taste. Boil the noodles until they are soft. For me in 6 minutes they are soft enough for me.


Top with sauce and a slice of bread or biscuit and enjoy.


Ingredients

3 cups of all purpose flour
2 large eggs
3 tablespoons of water
1 teaspoon of olive oil
1/4 teaspoon of salt
