Frosted Sugar Cookies

I've always liked these thick, soft frosted sugar cookies which you find in the grocery store, but have never tried to make them until now. The recipe makes the same yummy cookies which you can find in the store and you can dye the icing any color you want. I ran out of food coloring before making this batch and forgot to pick more up so mine are white. I know they are bland looking, but oh so yummy.


Combine flour, baking powder and salt. Whisk together to blend and set aside.


Using a mixer, combine the butter and sugar. Beat until soft and fluffy.

Beat in one egg at a time mixing well in between additions.

Blend in the vanilla into the mixture.


On a low speed slowly add the dry mixture until just incorporated.


Cover and chill the dough in the fridge for 1 hour.


Preheat oven to 350F. Scoop a partially fulled quarter cup measure and place on a baking sheet lined with parchment paper.


Flatten the ball into a round disk and repeat until all dough is used. This will require 2 sheets being used twice each.


Bake for 10 - 12 minutes. All the cookies to cool for several minutes on the baking sheet. The baked cookies below. They shouldn't be brown.


When the cookies are cooling, it is time to make the frosting. Place the confectioner's sugar in a mixer bowl. add melted butter, vanilla and milk. Whisk until smooth. Add an additional 1 teaspoon of milk to the mixture until the desired consistency is reached.

Now it's time to frost the cookies as shown below. The only thing left is to enjoy the cookies.



Ingredients

Cookies:

4.5 cups of all-purpose flour
4.5 teaspoons of baking powder
0.75 teaspoons of salt
3 sticks of unsalted butter, room temperature
1.5 cups sugar
3 eggs
5 teaspoons of vanilla extract

Frosting:

5 cups of  confectioner's sugar
1/3 of a cup of unsalted butter, melted
1 tablespoon of  vanilla extract
7 tablespoons of milk.
Food coloring if desired
