Stuffed Bell Peppers

I have never had or made a stuffed pepper before this, but have always enjoyed bell peppers on pretty much anything. After finding this recipe it seemed easy and looked delicious. I used Italian sausage instead of beef, but I think you can use pretty much any meat you would like.


Wash your peppers and cut off the tops. Clean out all the seeds and flesh until you have nice pepper bowls.


Fill up a pot with water and a pinch of salt. Bring to boil and place pepper in the water for approximately 3 minutes or until flesh is tender. Set aside.


Cut up the onion and saute in a pan.


Cook until translucent. Add garlic and fry for 1 additional minute then set aside.


If you use sausage in the recipe like I did, make sure to remove the casing from the sausage before using them in the mixture in the following step.


Combine the meat, onion, rice, tomato and spices. Mix well. You can mix by hand or use a mixer. I opted for the easier method.


At this point the cheese hasn't been added yet because I wasn't sure if I was going to layer the meat mixture in the pepper or just mix it in. If you want to layer it, do not add the cheese in the mixing stage. I just mixed the cheese in to streamline the process.


Once the mixture is completely mixed, spoon it into the pepper bowls. Place the peppers on a baking sheet.


Next, we have to make the topping that covers the peppers. Add together ketchup, Worchetershire sauce and hot sauce.


Cover the pepper's with the sauce.


Top with some extra Mozzarella cheese. Bake at 350 F for 45 - 50 minutes or until cooked all the way through of course since the meat is uncooked.

Ingredients

4 bell peppers
Salt
Olive oil for frying
1 medium onion
1 clove of garlic
1 - 1.5 pounds of beef or sausage
1.5 cups of rice, cooked
1 can of chopped tomatoes, drained
1 tablespoon of oregano
fresh ground pepper to taste
6 oz of feta cheese
Mozzarella cheese to taste
1/2 cup of ketchup
1/2 teaspoon of Worcestershire sauce
Hot sauce to taste
