Chicken Parmesan

I thought this would be a nice addition to just having some homemade pasta with sauce and / or meatballs. It is not difficult at all and just requires a few minutes of hands on time and about an hour baking. I really enjoyed it.


Place the eggs in a bowl and whisk.


Next place the bread crumbs in another bowl.


Take the chicken breast and dip it in the egg ensuring it is entirely coated. Next toss it in bread crumbs. Once it is completely covered place it on a greased baking sheet. I wanted to get some pictures in the middle of the process, but as you will find out your fingers get covered in crumbs. Once all pieces are breaded place in oven at 350F for 40 minutes or until cooked.


Next, pour half of the sauce into a 7 by 11 baking dish. I only had a slightly larger dish available so I just poured sauce in a section of it.


When the chicken is done cooking place the chicken on the sauce bed.


Cover with remaining sauce.


Sprinkle cheese over the chicken breasts and place in oven for 20 additional minutes.


During the last 10 minutes of cooking I cooked some home made linguine and topped it with a bit of sauce.

Ingredients

2 eggs
2 ounces of bread crumbs
4 chicken breasts
20 ounces of spaghetti sauce
2 ounces of mozzarella cheese
1/4 cup of Parmesan cheese
