Meatloaf

I've enjoyed this recipe for a while as its easy to make, but a good change of pace from what is normally served on a daily basis. Most of the ingredients can be substituted with just about anything from using ground pork or turkey, adding peppers, etc.

Combine all ingredients into a bowl. For the onion, pepper, etc. I use my mandolin slicer to make quick work of it. 



Mix all ingredients together. This can be done by hand or using a mixer. I'm lazy so I always opt for the mixer. 


Once mixed together, place into a meatloaf pan or a small bread pan. A meatloaf pan just has hold drilled in the bottom to allow the grease to drain through. The one below was an old bread pan with holes drilled in it.


Once the meat mixture is packed into the pan, top with ketchup or BBQ sauce. Bake at 350F for 60 minutes or until cooked all the way through.


Finished meatloaf.

Ingredients

2 lbs ground beef (Suggest you use lean beef)
1 whole onion, diced
1 whole egg
1/2 sleeve of soda crackers (Can substitute with oats)
1 cup ketchup (extra for glaze; Can be BBQ sauce)
